Cottage cheese dumplings are a sweet that everyone loves. One of the most delicious classic desserts, it's crunchy on the outside and soft on the inside, almost melting in your mouth. The sweetness and texture of the dumplings are balanced by the sour cream, creating the perfect harmony of flavours.
The dish's domestic history dates back to the 19th century. It was the Austrians who introduced the Hungarian people to cottage cheese dumplings, which became increasingly popular in the second half of the century. This coincided with the rapid development of the dairy industry in Hungary.
Although the most popular in Hungary is the cooked version, there are also fried versions and nowadays there are recipes that do not need to be either fried or cooked. We've brought you a classic recipe that will have the big and small in the family licking their fingers!
Recipe for the perfect cottage cheese dumpling
Ingredients for the dumpling
50 dkg of semolina
7 tablespoons of semolina
3 large eggs, 4 if smaller
1 pinch of salt
vanilla sugar
lemon zest
1 tablespoon of sugar
Ingredients for the crumbs:
15 dkg breadcrumbs
3 tbsp cooking oil
Ingredients for serving:
sour cream to taste
icing sugar to taste
a little lemon zest
The preparation
Good quality clotted cottage cheese is the best choice for cottage cheese dumplings, but it is best to break it up before use to ensure a fine texture and to allow the dumplings to set. To the cottage cheese, add the egg yolks, sugar, vanilla sugar, lemon zest, salt and semolina and mix well. Whip the egg whites until stiff peaks form, then add them to the cottage cheese mixture in a loose motion. This will make the dumpling really light. Once this is done, let it rest in the fridge for 1 hour.
During this time, prepare the crumbs. All you need to do is pour the oil into a pan and fry the breadcrumbs. It's worth stirring constantly, as it can easily stick!
After 1 hour, the dumplings are ready! Take out the cottage cheese mixture and shape into medium sized dumplings. Let the cooking begin! Put a large pot of water on the stove, when it boils, carefully lower the dumplings into it. After a while they will rise to the surface of the water. Once they do, wait a few minutes, then lift them out and roll them in golden brown toasted breadcrumbs.
To serve, add sour cream and icing sugar and sprinkle a squeeze of lemon zest on top
