The best of local flavours, all the flavours of the countryside: this is farm-to-table!

Farm-to-table literally translates as farm-to-table. More specifically, it means serving food with ingredients from local farms that meet only the highest quality criteria.

This concept is very fashionable these days, and in many ways it is linked to deeper messages. Firstly, sustainability: carefully selected local ingredients do not have to travel long distances around the world to reach the plate, but arrive at the restaurant in an environmentally responsible way, taking the shortest route.
Another important aspect of the farm-to-table concept is modern environmental management and all the other related eco-friendly solutions (e.g. minimisation of packaging). Farm-to-table is an expression of care for the environment, with land cultivated with appropriate tools, organic, chemical-free or natural plant ingredients, and animals kept in ethical conditions.

A third, equally important ars poetic of farm-to-table, which has practical implications beyond the theoretical, as well as the two above-mentioned aspects, is respect for nature. This means taking just as much of our environment as we need. We don't gut it, we don't deplete it, but we take from it what is justified and provide for its 'replenishment'.

We must not forget to support local small farms directly. By linking Hungarian producers and small farms with urban restaurants, small local suppliers can be directly patronised.

The end result of farm-to-table is fresh and excellent seasonal ingredients, fantastic flavours, the perfect stand-alone gastronomic experience where the menu and concept is not the dish but the ingredient.

Once the idea was formulated, the KIOSK team set out to find free-range farms, small producers, manufactures and suppliers that met the concept and standards of the restaurant. It was a very rewarding process and we have maintained a good personal relationship with the farmers ever since.

The seasonal ingredients available are the most nutritious and flavourful in the season, and Hungarian farmers and their fields provide us with a very rich and varied range of ingredients at all times of the year. Thus, in our restaurant, we offer our guests a concept built around different ingredients for each season.

After lengthy preparation, we are happy to say that virtually every dish at KIOSK has the authentic flavours of Hungary in it, with the passion and expertise of the preparation, in addition to the fresh and local ingredients.
